Which Vanilla should I choose?
CO2 extraction pulls more of the delicate constituents out of the plant material that can be damaged by the heat of steam distillation. This results in a more potent oil, both in aroma and in therapeutic value. CO2 extracted oils tend to be more expensive than steam distilled oils, but the higher quality is often worth the price. Vanilla is steam distilled where as Vanilla CO2 is extracted by the CO2 method.
